If you sink a knife into a steak or chicken thigh the minute it comes off the grill, you lose all those juices. A few minutes of cooling helps the juices settle back into the meat. It's worth the wait!

  • Don't put seafood on the hottest part of the grill. Seafood is more fragile than other types of protein, so the flesh may burn or it could fall apart before it's cooked through.
