Keto Egg Crepes with Blueberry Cream Sauce

PER Serving (1 egg crepe with ½ cup blueberry cream sauce): CALORIES 523 | FAT 49g | CARBOHYDRATES 7g | FIBER 1g | NET CARBOHYDRATES 6g | PROTEIN 13.5g

Warm, fluffy, made with eggs, and served for breakfast. Remind you of anything?

Okay, you probably thought of pancakes. Close, but not quite. Those words are ways to describe this amazing keto egg crepes recipe you're about to dive into.

While not the same as pancakes, the two breakfast foods share both similarities and differences.

On the one hand, both can be made gluten-free and sugar-free if you want them that way. Both are also made with eggs.

But most pancake recipes are made with wheat flour, which is not approved on keto or low-carb diets (except for our Almond Flour Keto Pancakes!).

While we love our keto pancakes and egg scrambles for breakfast, we also like to change things up from time to time. And these crepes are the perfect recipe for that!

Why You'll Love These Keto Egg Crepes

Ask any low-carb dieter what the trickiest meal of the day is, and they'll likely tell you breakfast. This is due to a couple of reasons:

  • First, breakfast—no matter how you choose to eat—can be hard to focus on when you have to get out the door for work.
  • Second, and more specific to a keto dieter, is that it doesn't seem like you have many options at your disposal when you're counting carbs.

The truth is, while some keto dieters might get creative with their breakfasts (or even practice intermittent fasting) most people eat pretty much the same egg scramble every morning.

That can get old—which is exactly why you'll love these egg crepes.

It combines fluffy eggs with the richness of heavy cream and the sweet tartness of blueberries, so it's almost like you're combining a few popular breakfast dishes into one.

And with 13.5 grams of protein, plenty of healthy fats, 6 grams of net carbs, and a boatload of antioxidants (see the next section), this egg crepes recipe might become one of your regular breakfast options.

Top 3 Health Benefits of this Recipe

Besides being delicious and easy to make, you might notice a theme when it comes to the health benefits of these low-carb egg crepes...

1. Blueberries are antioxidant-rich

Blueberries rank high on the list of fruits with antioxidant properties. Flavonoids in blueberries appear to be the most healthful [1]. Among the many benefits, flavonoids have been shown to have positive effects on blood pressure, cholesterol, and heart health [2][3].

Consuming blueberries can also protect and reduce DNA damage, which helps reduce the risk of cancer and minimize the effects of aging [4].

And as far as low-carb fruits go, blueberries are probably at the top of the list. They're high in fiber and pretty low in carbs, so the net carbs per serving stays low [5].

2. Cinnamon is also packed with antioxidants

For thousands of years, cinnamon has been used as both a spice and for health purposes [6].

Here are some of the reasons why:

  • Cinnamon contains polyphenols, a powerful antioxidant with anti-inflammatory and immune-boosting properties linked to a lowered risk of diseases [7]. As inflammation is linked to many ailments that affect Americans, such as type 2 diabetes and cancer, any type of anti-inflammatory foods you can add to your diet are a good thing [8].
    • For what it's worth, cinnamon has been shown to lower blood sugar levels and can help manage the symptoms of diabetes and protect against cancer, too [9,10].
  • Consuming this spice may help protect against heart disease by improving blood pressure and cholesterol [11].

It's safe to say the benefits are as applicable in these egg crepes as they were back in 2800 BC!

3. Eggs also contain (you guessed it!) antioxidants!

Rounding out this list, egg yolks are a good source of lutein and zeaxanthin—two antioxidants that are important for eye health. They can help prevent eye disorders such as macular degeneration and cataracts [12].

Holy antioxidants!

Eggs also provide all the essential amino acids your body needs, and are a great source of protein and fat. Their satiating properties make them helpful for weight loss because consuming eggs helps you feel full longer which can cause you to eat less [13].

Ingredients:

  • 2 tablespoons butter
  • 4 eggs
  • 2 tablespoons heavy whipping cream
  • ½ cup heavy whipping cream
  • ½ cup frozen blueberries
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Preparation:

  1. For the Egg Crepe: Whisk together eggs and 2 tablespoons heavy whipping cream.
  2. Melt 1 tablespoon butter in a large nonstick skillet. Pour half of the egg mixture into skillet, swirling pan to coat the bottom and creating the thinnest layer egg possible.
  3. Allow to cook undisturbed 1-2 minutes or until set and cooked on the bottom.
  4. Run a rubber spatula around edges of the egg crepe to loosen and flip the crepe to fully cook the other side, another 1-2 minutes.
  5. Repeat the process with the other half of the egg mixture and 1 tablespoon butter.
  6. For the Blueberry Cream Sauce: In a small saucepan over medium-high heat, combine frozen blueberries, ½ cup heavy whipping cream, vanilla extract, and cinnamon.
  7. Bring to just below a boil, whisking constantly. Remove from heat, and using the back of a fork, mash blueberries into cream. If you desire a smoother sauce, you can puree with an immersion blender.
  8. Serve 1 egg crepe topped with ½ cup blueberry cream sauce.
